Mead
The honey for this specialty dessert-style wine is produced in hives throughout the Sierras. It is composed of a blend of three types of honey: cotton– alfalfa, orange blossom and sage. Each type brings a unique quality to the blend and contributes to the overall complexity of the mead. Alfalfa is neutral in flavor but yields a dark, amber color. The orange blossom brings a floral bouquet to the nose of the wine. Toyon, an evergreen shrub also known as California Holly, is lighter in color than the alfalfa and helps to balance the blend. Our Mead can be served chilled or mulled with the included spice packs.
Raspberry Mead
Our Raspberry Mead is a blend of our Chaucer’s Mead and a small portion of our Raspberry Wine. A blend of fruit such as raspberry is known as Melomel. This blend of fruit and honey has been enjoyed for centuries. Less sweet than our regular mead, this wine finishes with a lingering crisp, refreshing raspberry and honeysuckle impression.
Pomegranate Mead
Our Pomegranate Mead is made from a blend of alfalfa, orange blossom, sage, and wildflower honey, sourced from beekeepers in Northern California. The honey base is co-fermented with fresh, local pomegranate juice, which makes up 20% of the blend.

Sparkling Mead
The honey for this specialty sparkling honey wine is produced in hives throughout California’s Central Valley and Sierra Mountains. Our Chaucer’s Sparkling Mead is composed of a blend of many types of honey: alfalfa, orange blossom, wildflower and sage. Each type brings a unique quality to the blend and contributes to the overall complexity of the Mead. Alfalfa is neutral in flavor but yields a dark, amber color. The orange blossom brings a floral bouquet to the nose of the wine. Wildflower and Sage are lighter in color and flavor but taste fresh with hints of spice.
